I saw one of those Instagram reals of a British guy saying he could make a better fast-food-style chicken sandwich. Of course, if you’re like me and see it, you’ll be thinking, but wait, most chicken sandwiches are just fried pieces of chicken breast. But that’s not always the case. Burger King Chicken sandwich much? McDonalds Chicken Nuggets?
Of course, his recipe was flour and cornflakes for his breading that he baked in the oven. Yeah, all done wrong. So, here we go - my version of this recipe which is waaaay better.
Start out by throwing those pork rinds in the food processor for your breading. Seriously, this is better than flour and breadcrumbs or corn, whatever.
Get 1-2lbs of ground chicken. Yes, ground, and make patties out of it. This stuff is sticky too so you don’t need to put them in eggs, the porkrinds stick no problem.
For chicken seasoning, I seasoned with BBQ dust and a brand new one to me, Salt Dust. Hat tip to
because its a great new spice.Coat your chicken patty generously in pork rinds. While doing this, make sure your pan (cast iron preferred) is going with some coconut oil or your favorite non-seed oil option.
Fry until you see the bottom is going golden brown, and then flip.
Temp to 165 and put them on a rack or a plate with a paper towel to eliminate the excess oil.
Sauce boss time.
While your chicken sits for a minute, it’s time for some hot chicken sauce. I say hot; it’s not really all that hot, it’s tasty.
In a bowl, put a cup of plain Greek yogurt, and do 4-10 heavy dashes of Franks Red Hot. Add some salt, pepper, garlic powder, onion powder, and Lawry’s season salt and stir till fully mixed. I thought it was strangely reminiscent of spicy ranch.
Next, add a dollop of this to your chicken patty.
Now, if you’re serving people who are eating bread, etc, throw this on a bun, slice a tomato, add a couple of pickles and some lettuce, and you’re set. If you’re sticking to keto, then tomato and pickles, and wrap it in lettuce, or do what I do and just eat it like this.
